Thai Pork & Peanut curry

Method:

  1. 2 chops of pork cubed
  2. fry with shallots (2) and cook (5 mins)
  3. Add Thai red curry paste 1 tbsp +
  4. 2 tbsp peanut butter (2 mins)
  5. I tsp brown sugar +
  6. 1 tbsp soy sauce +
  7. hot water
  8. Coconut milk (1 bag)
  9. Simmer 15 mins
  10. Add veg and cook for 5 mins or until soft
  11. Peppers onions baby corn
  12. Finally add spring onions 2 mins before serving and 1/2 lime – juice
  13. Garnish with coriander
