Thai Pork & Peanut curry
Method:
- 2 chops of pork cubed
- fry with shallots (2) and cook (5 mins)
- Add Thai red curry paste 1 tbsp +
- 2 tbsp peanut butter (2 mins)
- I tsp brown sugar +
- 1 tbsp soy sauce +
- hot water
- Coconut milk (1 bag)
- Simmer 15 mins
- Add veg and cook for 5 mins or until soft
- Peppers onions baby corn
- Finally add spring onions 2 mins before serving and 1/2 lime – juice
- Garnish with coriander
