Sticky Chicken Pancakes

An indulgent pancake without the sweetness but with great sticky chicken

  1. Pancakes
    1. 2 eggs
    2. 6 heaped dessert spoons of plain flour
    3. Salt
    4. Enough milk to make the mixture same consistency as single cream

Sticky Chicken:

  1. 3 breasts of chicken
  2. 3 tablespoons of sweet chilli sauce
  3. 2 tablespoons of light soy sauce
  4. 2 tablespoons of sherry/rice wine
  5. Extra chilli flakes if you want it hot
  6. A tsp of chopped/crushed ginger
  7. 2 cloves garlic (optional)

  1. Thinly sliced spring onions
  2. Thinly sliced cucumber
  3. Very thinly sliced white cabbage
  4. …. Basically you can just put any salad ingredients in the pancake OTHER than tomatoes

  1. Cut 3 breasts of chicken into small slithers and put in a bowl
  2. Into the bowl pour the sweet chilli sauce, soy sauce, sherry and leave marinating while you cook the pancakes.
  3. Heat a wok VERY hot and fry the chicken in small batches till its ‘caramelised’ / sticky.

Make pancakes (while the chicken is marinating)

  1. Flour and salt into a big mixing bowl
  2. Beat eggs into the flour adding milk slowly till the mixture is lump-free and same consistency as single cream
  3. Leave to rest for 10 mins
  4. Ladle (one spoon at a time) into a hot frying pan.  And cook as you normally do pancakes.

Serve pancakes with chicken and salad (veg?) roll pancake up and enjoy
