Sticky Chicken Pancakes
An indulgent pancake without the sweetness but with great sticky chicken
Ingredients:
- Pancakes
- 2 eggs
- 6 heaped dessert spoons of plain flour
- Salt
- Enough milk to make the mixture same consistency as single cream
Sticky Chicken:
- 3 breasts of chicken
- 3 tablespoons of sweet chilli sauce
- 2 tablespoons of light soy sauce
- 2 tablespoons of sherry/rice wine
- Extra chilli flakes if you want it hot
- A tsp of chopped/crushed ginger
- 2 cloves garlic (optional)
Assembly!!
- Thinly sliced spring onions
- Thinly sliced cucumber
- Very thinly sliced white cabbage
- …. Basically you can just put any salad ingredients in the pancake OTHER than tomatoes
Methodology
- Cut 3 breasts of chicken into small slithers and put in a bowl
- Into the bowl pour the sweet chilli sauce, soy sauce, sherry and leave marinating while you cook the pancakes.
- Heat a wok VERY hot and fry the chicken in small batches till its ‘caramelised’ / sticky.
Make pancakes (while the chicken is marinating)
- Flour and salt into a big mixing bowl
- Beat eggs into the flour adding milk slowly till the mixture is lump-free and same consistency as single cream
- Leave to rest for 10 mins
- Ladle (one spoon at a time) into a hot frying pan. And cook as you normally do pancakes.
Serve pancakes with chicken and salad (veg?) roll pancake up and enjoy
