Khao Pad Tom Yum Gai

Ingredients (2 people)

  • 2 breasts Chicken
  • Button Mushrooms – 1/2 punnet
  • 1 large onion large diced
  • 1 tomato quartered then halved
  • Thai chilli paste (Nam Phrao Phro)
  • Kafir lime leaves torn in half to release flavours (8)
  • Ginger (8 small slices)
  • 1 tsp Lemon grass (pulped)
  • 2 tbsp seasoning oil
  • 3 tbsp Lime juice
  • 3 tbsp Fish Sauce
  • 2 tsp sugar
  • 2 chillies

Methodology

Fry up the following (1 min):

  1. Button Mushrooms – 1/2 punnet
  2. 1 large onion large diced
  3. 1 tomato quartered then halved
  4. 2 chillies
  5. Thai chilli paste (Nam Phrao Phro)
  6. Kafir lime leaves torn in half to release flavours (8)
  7. Ginger (8 small slices)
  8. 1 tsp Lemon grass (pulped)

Add chicken and seal (2-3 mins)

Add the following and heat up (2-3 mins)

  1. 2 tbsp seasoning oil
  2. 3 tbsp Lime juice
  3. 3 tbsp Fish Sauce
  4. 2 tsp sugar

Mix in pre-cooked rice (2 portions) mix thoroughly and serve with spring onion garnish
