A simple but great spaghetti packed with spice – suitable for 2
Ingredients
- 100g long stem broccoli – cut into 1/3rds
- 180g Spaghetti (if hungry bump up to 220g)
- 2 tbsp olive oil
- 1 clove garlic – crushed
- 150g Cherry tomatoes halved
- 150g king prawns – raw
- 1 tbsp (heaped harrissa paste)
- 1 lemon zested
Methodology
- Cook broccoli until tender (1:30secs)
- Cook pasta
- Heat the oil and fry garlic then dispense with garlic keeping oil (Yeah right)
- Fry tomatoes until softening and bursting
- Add prawns until go pink
- Add harissa
- Add lemon zest
- Add spaghetti and cover in mixture
Serve with a spring onion garnish sliced diagonally
