Ingredients
- Enough meat for 2 people (2 chicken breasts or 8 ozs beef/pork)
- 2 cloves Garlic
- 1 tsp Soy Sauce
- Marinate meat with all ingredients
- 1 cup Snake beans or green beans, cut into ¾ inch long
- 1 Onion, cut into ½ inch thick, lengthwise.
- 50 – 60g Holy basil (this weight includes stems (about 1 ½ cup packed)
- 2 Fresh Thai chillies (Prik Kee Noo), finely chopped.
- 2 Tbsp Nam Phrik Phao (contain shrimp)
- 1 Tbsp Soy sauce
- 3/4 shallots
- You can add 1/2 packet of powder as well (see image)
- Thai basil leaves (not easy to find – available quite often in Waitrose or from speciality stores)
Methodology
- Marinate meat with garlic, soy sauce
- Set the heat at medium high add 3 tbsp oil, until the wok is hot
- Add shallots and chillies
- Add marinated meat and stir-fry until cooked
- Add Nam Phrik Phao chilli paste, and mix well
- 1 Tbsp oyster sauce
- Squirt maggies
- 1 Tbsp sugar
- Add Snake beans or green beans and onion, stir-fry for 1- 2 minutes
- Add soy sauce, chilli, and mix well until vegetables are cooked but firm.
- During this process add water 1 -2 tbsp at a time
- Add Holy basil and mix well. Stir-fry until basil is wilted
- Add fish sauce to taste
Serve with rice and garnish with red chilli sticks
