Thai Chicken Fried Rice

Thai Chicken Fried RiceMethod:

  1. 3 bulbs garlic crushed
  2. 4 shallots
  3. 1 Birds eye chilli (if no kids) 2 if need heat
  4. Heat wok v hot and fry above briefly do not burn garlic
  5. Add cubed (small cubes) chicken – med breast per person
  6. Fry until cooked through
  7. Add 1 or 2 eggs and just get them semi cooked so they are slimy
  8. Add pre-cooked rice to wok and spread around to get warmed up 2 mins then add veg
  9. Select 2 or 3 of the below
  10. 1/2 sweet Pepper
  11. Grated carrot as small as poss as takes ages to cook in stir fry
  12. 1/2 onion julienned
  13. Thinly sliced cabbage
  14. Frozen peas
  15. Sweet corn
  16. Carrots
  17. 3 tbsp maggies
  18. 3 tbsp soy
  19. 3 tbsp oyster sauce
  20. Mix well into rice
  21. Add fish sauce to taste
  22. Serve with coriander garnish (if required)
