Thai Chicken Fried Rice
Method:
- 3 bulbs garlic crushed
- 4 shallots
- 1 Birds eye chilli (if no kids) 2 if need heat
- Heat wok v hot and fry above briefly do not burn garlic
- Add cubed (small cubes) chicken – med breast per person
- Fry until cooked through
- Add 1 or 2 eggs and just get them semi cooked so they are slimy
- Add pre-cooked rice to wok and spread around to get warmed up 2 mins then add veg
- Select 2 or 3 of the below
- 1/2 sweet Pepper
- Grated carrot as small as poss as takes ages to cook in stir fry
- 1/2 onion julienned
- Thinly sliced cabbage
- Frozen peas
- Sweet corn
- Carrots
- 3 tbsp maggies
- 3 tbsp soy
- 3 tbsp oyster sauce
- Mix well into rice
- Add fish sauce to taste
- Serve with coriander garnish (if required)
