Southern Chicken Curry p92
Methodology

Blended Paste
- 5 large dried chillies
- 1/2 tsp salt
- 1 tsp chopped lemon grass
- 1/2 tsp coriander seeds or powder
- 1/2 tsp cumin seeds or powder
- 1 tsp shrimp paste
Ingredients
- Oil
- 4 garlic cloves
- 6 chicken breasts – small ish
- 450 ml coconut cream (1 or 2 packets powder)
- 500 ml chicken stock (1 or 2 cubes)
- 2 tbsp sugar
- 4 tbsp lime juice
- 4 tbsp fish sauce
Cooking
- Fry chicken and garlic in wok – remove and set aside
- Put oil in saucepan heat
- add paste fry gently for 1 min
- Add half coconut cream and stir
- Add chicken and stir
- Add remainder coconut milk
- Add chicken stock, fish sauce – stir
- Add sugar and lime juice – stir
- Bring to boil and reduce to thickish sauce
- Serve and 2 chillies to garnish
