Southern Chicken Curry p92

Methodology

3-4 people

Blended Paste

  • 5 large dried chillies
  • 1/2 tsp salt
  • 1 tsp chopped lemon grass
  • 1/2 tsp coriander seeds or powder
  • 1/2 tsp cumin seeds or powder
  • 1 tsp shrimp paste

Ingredients

  • Oil
  • 4 garlic cloves
  • 6 chicken breasts – small ish
  • 450 ml coconut cream (1 or 2 packets powder)
  • 500 ml chicken stock (1 or 2 cubes)
  • 2 tbsp sugar
  • 4 tbsp lime juice
  • 4 tbsp fish sauce

Cooking

  1. Fry chicken and garlic in wok – remove and set aside
  2. Put oil in saucepan heat
  3. add paste fry gently for 1 min
  4. Add half coconut cream and stir
  5. Add chicken and stir
  6. Add remainder coconut milk
  7. Add chicken stock, fish sauce – stir
  8. Add sugar and lime juice – stir
  9. Bring to boil and reduce to thickish sauce
  10. Serve and 2 chillies to garnish
