Beef Pho Noodles

Beef Pho is Vietnam’s national dish and is really simple to cook, IF you do not get too “over the top”

Ingredients

  1. 2 Fresh red chillies one to to infuse into the broth and one to serve as a garnish
  2. 1 tbsp Peanut oil
  3. 1 Large Onion
  4. 2 (or more) cloves of garlic
  5. 1 medium carrot
  6. 1 tbsp grated ginger
  7. 1 l of beef stock
  8. 1 tsp black peppercorns
  9. 2 star anise
  10. 1 tbsp fish sauce
  11. 250 g rump steak – slice as thinly as poss
  12. 400 g rice nooles
  13. 150 g brean sprouts
  14. 3 scallions /spring onions
  15. 10 mint leaves
  16. 1/2 lemon quartered

Methodology

  1. Add the steak to the freezer
  2. Heat the oil and add:
    1. 1 tbsp Peanut oil
    2. 1 Fresh red chillies
    3. 1 Large Onion sliced/diced
    4. 2 (or more) cloves of crushed garlic
    5. 1 medium carrot sliced
    6. 1 tbsp grated ginger

Once the onion is soft (5 mins?) then add:

  1. 1 l of beef stock
  2. 1 tsp black peppercorns
  3. 2 star anise
  4. 1 tbsp fish sauce

…simmer for 30 mins ish so all the spices can infuse

In the meantime prepare the rest of the dish

  1. Slice the remaining chilli
  2. Gather the mint leaves
  3. Chop the spring onions diagonally
  4. Add the rice noodles to boiling water so they can cook
  5. Remove the “almost” frozen steak from the freezer and slice as thinly as you can

Final stage

  1. Sieve the broth and discard the misc vegetables/herbs and spices
  2. Place the COOKED noodles into bowls and lay the steak around the noodles so it is as low as poss
  3. Add the bean sprouts
  4. Layout the mint and chillies and spring onions on top
  5. Place a quartered lemon on the side

Pour the BOILING BROTH over the noodles and beansprouts etc – ensuring the meat is covered around the edges

Serve and enjoy!
