Beef Pho Noodles
Beef Pho is Vietnam’s national dish and is really simple to cook, IF you do not get too “over the top”
Ingredients
- 2 Fresh red chillies one to to infuse into the broth and one to serve as a garnish
- 1 tbsp Peanut oil
- 1 Large Onion
- 2 (or more) cloves of garlic
- 1 medium carrot
- 1 tbsp grated ginger
- 1 l of beef stock
- 1 tsp black peppercorns
- 2 star anise
- 1 tbsp fish sauce
- 250 g rump steak – slice as thinly as poss
- 400 g rice nooles
- 150 g brean sprouts
- 3 scallions /spring onions
- 10 mint leaves
- 1/2 lemon quartered
Methodology
- Add the steak to the freezer
- Heat the oil and add:
- 1 tbsp Peanut oil
- 1 Fresh red chillies
- 1 Large Onion sliced/diced
- 2 (or more) cloves of crushed garlic
- 1 medium carrot sliced
- 1 tbsp grated ginger
Once the onion is soft (5 mins?) then add:
- 1 l of beef stock
- 1 tsp black peppercorns
- 2 star anise
- 1 tbsp fish sauce
…simmer for 30 mins ish so all the spices can infuse
In the meantime prepare the rest of the dish
- Slice the remaining chilli
- Gather the mint leaves
- Chop the spring onions diagonally
- Add the rice noodles to boiling water so they can cook
- Remove the “almost” frozen steak from the freezer and slice as thinly as you can
Final stage
- Sieve the broth and discard the misc vegetables/herbs and spices
- Place the COOKED noodles into bowls and lay the steak around the noodles so it is as low as poss
- Add the bean sprouts
- Layout the mint and chillies and spring onions on top
- Place a quartered lemon on the side
Pour the BOILING BROTH over the noodles and beansprouts etc – ensuring the meat is covered around the edges
Serve and enjoy!
