Red chicken curry with bamboo shoots

Method:

(2-3 people)

  1. Heat up a small pot with the cooking oil
  2. fry garlic (4 cloves) + shallots (4-6) + 2 chillies (min)
  3. Add red curry paste 1-1 1/2 tbsp and sauté until aromatic
  4. Add the chicken and stir well with the curry paste
  5. Chicken stock (2blocks)
  6. Add coconut milk, 1 packet (thai version) and extra BARTS packet
  7. water as necessary
  8. Add kaffir lime leaves 3-4 sliced fresh if poss if not then 6 dry
  9. Add fish sauce 2 tsp – to taste
  10. 1 tsp palm sugar or sugar
  11. Bamboo shoots if required 1 big tin or 2 small
  12. 20 holy basil leaves (if wanted – strictly by choice)
  13. Garnish with thinly sliced cayenne pepper and coriander?l
