Red chicken curry with bamboo
Method:
(2-3 people)
- Heat up a small pot with the cooking oil
- fry garlic (4 cloves) + shallots (4-6) + 2 chillies (min)
- Add red curry paste 1-1 1/2 tbsp and sauté until aromatic
- Add the chicken and stir well with the curry paste
- Chicken stock (2blocks)
- Add coconut milk, 1 packet (thai version) and extra BARTS packet
- water as necessary
- Add kaffir lime leaves 3-4 sliced fresh if poss if not then 6 dry
- Add fish sauce 2 tsp – to taste
- 1 tsp palm sugar or sugar
- Bamboo shoots if required 1 big tin or 2 small
- 20 holy basil leaves (if wanted – strictly by choice)
- Garnish with thinly sliced cayenne pepper and coriander?l
