Tofu Laksa & Noodles

Very tasty laksa noodle broth suitable for 2

Ingredients

  1. 2 tbsp oil
  2. Block tofu - cut into 3/4 inch blocks
  3. 1/2 l Chicken Stock
  4. Can of coconut milk
  5. 1/2 bag Bean sprouts
  6. 1.5 teaspoons brown sugar
  7. Fish sauce - 2 tbsp
  8. 2 tbsp lime juice
  9. 4 Kafir lime leaves - torn
  10. Handful Coriander leaves chopped roughly
  11. 4 x spring onions sliced diagonally
  12. 1/3 VALCOM Thai Style Laksa Paste
  13. 200g rice noodles 4-6mm

Methodology

  1. Fry up the Laksa paste in the oil
  2. Add the coconut milk and Kafir lime leaves
  3. Add the chicken stock and simmer the mixture to thicken
  4. Add the tofu
  5. Add the sugar, lime juice and fish sauce
  6. Whilst this is going on cook the noodles in a separate dish until they are soft
  7. Finally add the coriander and spring onions a minute before serving

Serving

  1. Place the noodles in a bowl
  2. Place a handful of bean sprouts on top
  3. Pour the laksa soup/broth over all
  4. Add some coriander leaves to the top as a garnish
