Tofu Laksa & Noodles
Very tasty laksa noodle broth suitable for 2
Ingredients
- 2 tbsp oil
- Block tofu - cut into 3/4 inch blocks
- 1/2 l Chicken Stock
- Can of coconut milk
- 1/2 bag Bean sprouts
- 1.5 teaspoons brown sugar
- Fish sauce - 2 tbsp
- 2 tbsp lime juice
- 4 Kafir lime leaves - torn
- Handful Coriander leaves chopped roughly
- 4 x spring onions sliced diagonally
- 1/3 VALCOM Thai Style Laksa Paste
- 200g rice noodles 4-6mm
Methodology
- Fry up the Laksa paste in the oil
- Add the coconut milk and Kafir lime leaves
- Add the chicken stock and simmer the mixture to thicken
- Add the tofu
- Add the sugar, lime juice and fish sauce
- Whilst this is going on cook the noodles in a separate dish until they are soft
- Finally add the coriander and spring onions a minute before serving
Serving
- Place the noodles in a bowl
- Place a handful of bean sprouts on top
- Pour the laksa soup/broth over all
- Add some coriander leaves to the top as a garnish
