Beef Kofta Curry

INGREDIENTS

Curry

  1. Premade curry sauce
  2. 2 tablespoons olive oil use a bit more if needed
  3. 1 onion medium, chopped
  4. 2 tablespoons ginger garlic paste
  5. 1 tablespoon garam masala
  6. 1 teaspoon chili powder or paprika
  7. 1 teaspoon turmeric
  8. 1 teaspoon ground cumin
  9. 1 teaspoon ground coriander
  10. ¾ teaspoon salt adjust per taste
  11. 1 chili pepper chopped (jalapeno or cayenne or serrano)
  12. 1 tablespoon tomato paste
  13. 1½ cups crushed tomatoes see note
  14. 1 tablespoon fenugreek leaves (dried)
  15. 1 cup water
  16. 1 can coconut milk 
  17. Cilantro chopped for garnish
     

Koftas (Meatballs)

I cheated and used tesco meatballs

  1. 1 pound ground beef
  2. 1 onion medium, grated
  3. 1 egg large
  4. 4 tablespoons panko bread crumbs or 2 tablespoon chickpea flour
  5. 2 tablespoons chopped cilantro
  6. 1 tablespoon chopped mint or 1 teaspoon dry mint
  7. 1 tablespoon ginger garlic paste
  8. 2 teaspoons garam masala or tikka masala
  9. 1 teaspoon ground cumin
  10. 1 teaspoon ground coriander
  11. 1 teaspoon turmeric
  12. 1 teaspoon paprika
  13. 1 teaspoon red pepper flakes or red chili powder
  14. 1 teaspoon salt

    INSTRUCTIONS

    Beef Meatballs (Koftas)

    1. Combine all the ingredients for koftas (meatballs) in a mixing bowl. Mix and knead it well for 3-4 minutes and let it rest.
    2. Shape into smooth koftas and arrange on a baking sheet lined with aluminum foil.
    3. Broil meatballs on high for about 3 to 5 minutes on both sides. The broiling time may differ with each oven, so make sure to check initial progress.
    4. Alternatively the koftas may also be grilled.
    5. The koftas do not have to be completely cooked in this process as they will cook further in the sauce.

    Curry (Sauce)

    1. Heat olive oil in a cooking pot over medium heat. Add chopped onions and sauté until golden brown.
    2. Add ginger and garlic paste and stir for 2 minutes.
    3. Add garam masala, chili powder, turmeric, cumin powder, coriander powder, salt and mix well.
    4. Add half the premade curry sauce
    5. Add chillies, tomato paste and stir 2 minutes. Stir in the crushed tomatoes and cook couple minutes.
    6. Add the remainder of the curry sauce
    7. Add water
    8. Add koftas to the sauce. Adjust seasoning and consistency as needed.
    9. Add can coconut milk
    10. Increase the heat to medium high and once the curry starts bubbling, lower the heat and simmer for about 10 to 15 minutes.
    11. Stir in fenugreek leaves, which give a distinctive taste to this dish.
    12. Scatter chopped cilantro leaves on the top.
