Tom yum soup (4 pax)
Ingredients
- Tom yum paste packet (1 packet = 4 pax)
- Coriander – good handful, shredded
- 2-3 tomatoes quartered
- Sliced button Mushrooms
- 4-6 Shallots thickly sliced
- 1/2 packet noodles (waitrose straight ones)
- Lime juice (add to taste at end)
- Fish sauce (add to taste at end)
- Tom yum stock – if needed for body
- Chilli paste – if needed for body
- Choose prawns OR chicken for meat
Methodology
- Boil paste in hot water – 500 ml min per packet
- Soak noodles for 10 mins or until soft – then add to mixture
- 5 mins before serving add all other ingredients
- Garnish with sprigs of coriander
