Thai Green Curry (non-traditional)
Ingredients
Makes 2 to 3 servings
- 2 breasts chicken
- 1 red pepper
- 1 large onion
- 2 shallots
- 3 cloves garlic
- 1/2 packet green curry sauce
- Beans
- Rice for 2
- Coconut Milk
- Green curry powder
- Oil for frying
- Kafir lime leaves
- Bamboo shoots
INSTRUCTIONS
- Stir fry curry paste until a nice odour
- Add the chicken, shallots and garlic with splash of soy sauce
- Add green beans
- Add lime leaves
- Add splash of water and green curry powder
- Add coconut milk
- Add 1 tsp of sugar
- Once chicken cooked combine with coconut milk
- Add fish sauce to taste
- Add bamboo shoots (if required)
- Stir in coriander, and remove from heat. Serve over steamed rice.
