Thai Green Curry (non-traditional)

Ingredients

Makes 2 to 3 servings

  • 2 breasts chicken
  • 1 Pepper
  • 1 large onion
  • 3 shallots
  • 3 cloves garlic
  • 1 packet HOTDOT green curry sauce (very hot)
  • Beans
  • Long Stem Broccoli
  • Rice for 2
  • Coconut Milk
  • Green curry powder
  • Oil for frying

INSTRUCTIONS

  1. Stir fry chicken shallots and garlic with splash of soy sauce
  2. Add splash of water and green curry powder
  3. Boil up 500 ml coconut milk (using powder in this instance)
  4. Add beans and broccoli to coconut milk to cook and add 1 tsp of sugar
  5. Once chicken cooked combine with coconut milk
  6. Stir in cilantro, and remove from heat. Serve over steamed rice.
