Thai Green Curry (non-traditional)

Ingredients

Makes 2 to 3 servings

  • 2 breasts chicken
  • 1 red pepper
  • 1 large onion
  • 2 shallots
  • 3 cloves garlic
  • 1/2 packet green curry sauce
  • Beans
  • Rice for 2
  • Coconut Milk
  • Green curry powder
  • Oil for frying
  • Kafir lime leaves
  • Bamboo shoots

INSTRUCTIONS

  1. Stir fry curry paste until a nice odour
  2. Add the chicken, shallots and garlic with splash of soy sauce
  3. Add green beans
  4. Add lime leaves
  5. Add splash of water and green curry powder
  6. Add coconut milk
  7. Add 1 tsp of sugar
  8. Once chicken cooked combine with coconut milk
  9. Add fish sauce to taste
  10. Add bamboo shoots (if required)
  11. Stir in coriander, and remove from heat. Serve over steamed rice.
