Southern Thai Curry (adapted)

Ingredients

Makes 2 to 3 servings

  • 2 breasts chicken
  • 1 Pepper
  • 3 cloves garlic
  • 2-3 Shallots (small round)
  • 1 large onion
  • 3 pkts “Smart Eat” Southern Curry Paste
    (This sauce is HOT!)
  • Broccoli (long stem if poss)
  • Green Beans
  • 150 ml Coconut Milk
  • Other veg?
  • Big handful of coriander

INSTRUCTIONS

  1. Stir fry chicken, shallots and garlic
  2. Add broccoli beans & cook
  3. Add Curry paste
  4. Make coconut milk curry with 5 spoons powder and add (150 ml)
  5. Add peppers, onions
  6. Sprinkle Thai chicken stock
  7. 3 tbsp fish sauce (to taste)
  8. 2 tbsp lime juice (to taste)
  9. Add coriander

Serve over rice
