Southern Thai Curry (adapted)
Ingredients
Makes 2 to 3 servings
- 2 breasts chicken
- 1 Pepper
- 3 cloves garlic
- 2-3 Shallots (small round)
- 1 large onion
- 3 pkts “Smart Eat” Southern Curry Paste
(This sauce is HOT!)
- Broccoli (long stem if poss)
- Green Beans
- 150 ml Coconut Milk
- Other veg?
- Big handful of coriander
INSTRUCTIONS
- Stir fry chicken, shallots and garlic
- Add broccoli beans & cook
- Add Curry paste
- Make coconut milk curry with 5 spoons powder and add (150 ml)
- Add peppers, onions
- Sprinkle Thai chicken stock
- 3 tbsp fish sauce (to taste)
- 2 tbsp lime juice (to taste)
- Add coriander
Serve over rice
