Red Curry Noodle Soup
Ingredients
Makes 2 to 3 servings
- 1 or 2 breasts chicken
- 1 Pepper
- 1 large onion
- 1 packet Ajinomoto red curry powder
- Broccoli (long stem if poss)
- Egg Noodles (3 discs)
- 150 ml Coconut Milk
- Other veg?
- Mushrooms (Quartered if small if not slice)
INSTRUCTIONS
- Add red curry powder to 350 ml water and get to simmer
- Add broccoli and cook
- Make coconut curry with 4 spoons powder and add (150 ml)
- Add peppers, onions and mushrooms
- Sprinkle Thai chicken stock
- 3 tbsp fish sauce (to taste)
- 2 tbsp lime juice (to taste)
- Add traditional sweet basil (handful)
