Moo Grob
Ingredients
- Pork slab with skin on – 1 kg
- 3 Tomatoes
- 1 sprig Chinese celery
- 1 largeOnion
- 4-6 small spur chillies
- 1 large Lettuce
Methodology – Pork
- Dry pork as much as poss
- Score skin
- Rub pepper in top and bottom
- rub salt in top and bottom
- Put in oven for 10-15 mins on 190
- Knock back to 120 and let it sit
- After 2 hrs pull out and turn over to dry bottom out (meat side) for 20-30 mins
- Review every hour to make sure it is rendering fat out
- After 3-5 hrs remove and cube
Methodology – Salad
- Cut 3-4 toms into 6ths and put in bowl
- Add lettuce softish leaves
- add 2-6 chills very finely chopped
- Add celery – 1 sprig of chinese
- add raw onion julienned
- 3 limes/1 large lemon
- 3 tablespoons of fish sauce
- 1 teaspoon caster sugar
- Loaded tspn of chilli flakes
- Mix
- taste and adjust
- Add pork cubes
- Serve (perhaps with rice?)
