Moo Grob

Ingredients

  • Pork slab with skin on – 1 kg
  • 3 Tomatoes
  • 1 sprig Chinese celery
  • 1 largeOnion
  • 4-6 small spur chillies
  • 1 large Lettuce

Methodology – Pork

  1. Dry pork as much as poss
  2. Score skin
  3. Rub pepper in top and bottom
  4. rub salt in top and bottom
  5. Put in oven for 10-15 mins on 190
  6. Knock back to 120 and let it sit
  7. After 2 hrs pull out and turn over to dry bottom out (meat side) for 20-30 mins
  8. Review every hour to make sure it is rendering fat out
  9. After 3-5 hrs remove and cube

Methodology – Salad

  1. Cut 3-4 toms into 6ths and put in bowl
  2. Add lettuce softish leaves
  3. add 2-6 chills very finely chopped
  4. Add celery – 1 sprig of chinese
  5. add raw onion julienned
  6. 3 limes/1 large lemon
  7. 3 tablespoons of fish sauce
  8. 1 teaspoon caster sugar
  9. Loaded tspn of chilli flakes
  10. Mix
  11. taste and adjust
  12. Add pork cubes
  13. Serve (perhaps with rice?)
