Mee pad gai – fried noodles with chicken
Ingredients
- 2 cloves garlic
- 1 tbsp red curry paste
- 3 Shallots
- 2 chillies
- Egg
- Vegetables (Selection of the below)
- Onions julienned
- Red pepper
- Button mushrooms
- Small broccoli
- Green beans
- Fish Sauce
- Soy Sauce
- Lime juice
- Sugar
- Bean sprouts
- Spring onions
- Sen Mee noodles
Method
- Fry v hot
- Garlic
- Shallots
- Thai red curry paste
- Chillies
- Add chicken and allow to cook stirring – if getting dry add water
- Add 1 egg lightly beaten then when slimey add vegetables in order of time to cook
- Add noodles after good soaking to soften them
Add
- 2 tablespoons fish sauce
- 2 tablespoons light soy
- 3 tablespoons lime juice
- 1.5 spoons sugar
Finish with
- Handful bean sprouts
- 3 Spring onions
- Garnish with large red chilli pepper
