Larb moo

Ingredients

  1. 1/2 packet Larb powder – the more the hotter
  2. 2 breasts chicen/minced pork (250 g)
  3. 3-4 shallots
  4. Garlic
  5. Squirt of soy
  6. Bowl of mint (lots)
  7. 4 spring onions
  8. 2 uncooked shallots for texture
  9. 5-10 slices of red chilli pepper
  10. 4 -5 tbsp Lime juice (adjustable to taste)
  11. 3 tsp Fish Sauce (adjustable to taste)

Heat oil

  1. Add shallots and garlic – cook quickly
  2. Add meat and squirt of soy
  3. Add powder

When cooked add:

  1. Mint
  2. Spring onions
  3. 2 remaining shallots

Serve:

  1. Add lime juice and fish sauce to taste
  2. Garnish with slices of red chilli to give it colour contrast
  3. Serve with rice
  4. Serve in lettuce boats with tomatoes on the side or 1/4rd lime
