Larb moo/Gai (2pax)
Ingredients
- 1/2 packet Larb powder – the more the hotter
- 2 breasts chicen/minced pork (250 g)
- 3-4 shallots
- Garlic
- Squirt of soy
- Bowl of mint (lots)
- 4 spring onions
- 2 uncooked shallots for texture
- 5-10 slices of red chilli pepper
- 4 -5 tbsp Lime juice (adjustable to taste)
- 3 tsp Fish Sauce (adjustable to taste)
Heat oil
- Add shallots and garlic – cook quickly
- Add meat and squirt of soy
- Add powder
When cooked add:
- Mint
- Spring onions
- 2 remaining shallots
Serve:
- Add lime juice and fish sauce to taste
- Garnish with slices of red chilli to give it colour contrast
- Serve with rice
- Serve in lettuce boats with tomatoes on the side or 1/4rd lime
