Egg Fried Rice

Ingredients

  1. 3 eggs
  2. 25ml soy sauce
  3. 25ml sesame oil
  4. 15ml veg oil
  5. 200g cooked basmati rice, chilled
  6. 2 spring onions, sliced
  7. 2 tabs coriander, chopped

Methodology

  1. Beat the eggs, the soy and sesame oil together in a bowl
  2. Heat the veg oil in a non-stick wok or frying pan.
  3. Fry the rice until warm and then stir through the egg mixture.
  4. Cook until crispy and stir through the onions and coriander.
