Dans Curry Sauce
Ingredients
- 5 tablespoons olive oil
- 2 teaspoons mustard seeds
- A few twists of gara masala / spoon fenugreek seeds
- Curry leaves (needs a handful ideally) – I USED BAY LEAVES (2)
- 1 red chilli
- Fresh ginger (about two thumb size piece) – I USED GARLIC BY MISTAKE
- 2 onions – I USED 1 BIG ONION
- 1 teaspoon chilli flakes
- 1 teaspoon turmeric
- 1 tin plum tomatoes or 6 plum tomatoes
- 1 tin coconut milk – I USED HALF A CARTON OF COCONUT CREAM
- Salt
- Water (wine-glass size)
Methodology
- Put the mustard seeds, garam masala, chilli into the oil (not too hot) for a couple of mins till the seeds start to pop
- Add onions till soft
- Add everything else.
You can then freeze this sauce and add protein if needed when you want to eat it. I added chicken within this cooking
