Dans Curry Sauce


  1. 5 tablespoons olive oil
  2. 2 teaspoons mustard seeds
  3. A few twists of gara masala / spoon fenugreek seeds
  4. Curry leaves (needs a handful ideally) – I USED BAY LEAVES (2)
  5. 1 red chilli
  6. Fresh ginger (about two thumb size piece) – I USED GARLIC BY MISTAKE
  7. 2 onions – I USED 1 BIG ONION
  8. 1 teaspoon chilli flakes
  9. 1 teaspoon turmeric
  10. 1 tin plum tomatoes or 6 plum tomatoes
  11. 1 tin coconut milk – I USED HALF A CARTON OF COCONUT CREAM
  12. Salt
  13. Water (wine-glass size)


  1. Put the mustard seeds, garam masala, chilli into the oil (not too hot) for a couple of mins till the seeds start to pop
  2. Add onions till soft
  3. Add everything else.

You can then freeze this sauce and add protein if needed when you want to eat it. I added chicken within this cooking
