Chilli chicken with coconut milk

INGREDIENTS

  • 2 chicken breasts
  • 3 cloves garlic
  • 250 ml coconut milk
  • 4 shallots
  • 1/2 onion julienned
  • 3 chillies
  • 1/2 sweet pepper
  • 1 cup shredded basil
  • 1 cup shredded coriander
  • Fish sauce to taste
  • 1.5 tsps sugar

Method:

  1. Fry up chicken, shallots and garlic and chillies
  2. Add onions and peppers wait to soften
  3. Add coconut milk and let simmer
  4. Add coriander and basil 2 mins before serving
  5. Add fish sauce and sugar to taste
  6. Garnish with spring onions and serve lettuce and sliced tomato and rice
