Chilli chicken with coconut milk
INGREDIENTS
- 2 chicken breasts
- 3 cloves garlic
- 250 ml coconut milk
- 4 shallots
- 1/2 onion julienned
- 3 chillies
- 1/2 sweet pepper
- 1 cup shredded basil
- 1 cup shredded coriander
- Fish sauce to taste
- 1.5 tsps sugar
Method:
- Fry up chicken, shallots and garlic and chillies
- Add onions and peppers wait to soften
- Add coconut milk and let simmer
- Add coriander and basil 2 mins before serving
- Add fish sauce and sugar to taste
- Garnish with spring onions and serve lettuce and sliced tomato and rice
