Children Friendly Tomato Sauce
Makes 4 to 6 small servings – used as a sauce with pasta or a base for other dishes – it is specifically targeted to feed my daughter with pulped veg.
Ingredients
- 3 tins sliced tomatoes
- 1 large carrot
- 1 small tin of tomato puree
- 2 medium onions
- 4 cloves garlic
- 2 teaspoons salt
- 2 teaspoons sugar
Methodology
- Fry the onions & garlic softening them up
- Add the carrots for a minute or 2 to start the cooking process
- Pour in the tins of tomatoes
- Add the tomato puree
- Allow to simmer
- Add the sugar and salt and adjust taste
- Add 300 ml of veg stock (or chicken stock if not available)
- Allow to simmer again for 20 mins
- Liquidise to “ketchup consistency”
- Freeze in batches and use as necessary
