3 versions of Pad Thai sauce

  1. Mix together fish sauce, ketchup, Worcestershire, chili-garlic sauce and sugar.

  • 1/3 cup good-tasting chicken stock
  • 3 Tbsp. rice vinegar (or substitute white vinegar)
  • 1 Tbsp. lime juice
  • 3-4 Tbsp. brown sugar
  • 2 Tbsp. fish sauce
  • 1 Tbsp. soy sauce*
  • 1/8 tsp. white pepper

V3

  1. 3/4 Tbsp. tamarind paste (available at Asian/Indian food stores)
  2. 2 Tbsp. fish sauce
  3. 1-3 tsp. chili sauce (depending how spicy you want it)
  4. 2 – 3 Tbsp. brown sugar (more or less to taste)
